Delicious Recipes to Make at the Campground

Running a campground in Lafayette, LA we’ve had the pleasant opportunity to be exposed to all types of delicious recipes from all over this country. When it comes to cooking while camping or RV’ing our guests are highly creative for coming up with delicious meals that are amazingly simple. Looking for recipes that require few ingredients and are easy to prepare and cleanup is key to cooking while camping near Lafayette, LA. We’ve included a couple of recipes that we’re sure everyone in your group is sure to enjoy and that require little work on your part.

Foil pocket quesadillas

10″ Flour tortillas

Shredded pepper jack cheese

One 5 lb. rotisserie chicken, chopped

Cilantro

Salsa to taste (optional)

To make foil pocket: Lie two layers of regular foil or one layer of heavy duty foil on a flat surface. Load ingredients into middle, folding ends around and pinch to create a seal, allowing room in middle for steam to escape.

Place tortilla in middle of foil piece. Add shredded cheese, chicken and cilantro to one half of the quesadilla, fold in half, wrap foil around quesadilla and grill over medium heat for about five minutes, turning halfway through. Dip into salsa if desired.

Banana Boats

For this very simple yet mouthwatering dessert, just three ingredients are needed:

Bananas

Miniature chocolate chips

Miniature marshmallows

Simply cut each banana peel lengthwise about 1/2″ deep leaving both ends uncut at about a length of 1/2″. Open the banana to form a small pocket through the middle. Fill each banana with about a tablespoon of marshmallows and a teaspoon of chocolate chips. Squeeze bananas shut and wrap heavy duty foil. Grill for 5 to ten minutes over a medium heat or until the marshmallows are melted to their desired consistency.
