When you are RV living, you might think that you’re limited to cooking macaroni and cheese and hot dogs, but this simply isn’t true. You can make yourself some delicious, authentic Cajun food from the comfort of your camper! In this blog, we will go over some tasty Cajun recipes you can make in your RV!

Jambalaya

  • 1 tbsp of olive oil
  • 1 lbs of chicken breast, cut into cubes
  • ½ lb of sausage, sliced
  • 1 onion, chopped
  • 1 tbsp of cajun seasoning
  • 2 ½ cups of chicken broth
  • 1 can of tomatoes
  • 1 cup of long-grain rice

Heat oil in large skillet on medium-high. Add chicken and sausage and cook for five minutes, stirring frequently. Remove meat from skillet and set aside. Place onion in skillet and cook for two minutes. Stir in Cajun seasoning and put chicken and sausage back into the skillet. Add chicken broth and tomatoes and bring to a boil. Add rice and reduce heat to low. Cover and cook for 20 minutes, stirring occasionally.

Shrimp Gumbo

  • 1 green pepper
  • 2 garlic cloves
  • 1 onion
  • ¼ cup of butter
  • 1 can diced tomatoes and chiles
  • 1 can of corn
  • 1 tsp of salt
  • ¼ tsp pepper
  • 1 tbsp of sugar
  • ¼ tsp of cayenne pepper
  • ½ large can of milk
  • ¼ cup of green onions, chopped
  • 2 lbs of shrimp, peeled
  • 1 tbsp of cornstarch

Start by chopping the pepper, garlic, and onion. Saute them in butter until they are crispy. Add a can of tomatoes, corn, sugar, salt, pepper, and cayenne and let simmer for ten minutes. Add the milk and green onions; let cook for five minutes. Add shrimp and cook until they are fully pink. Add cornstarch and water to thicken into a paste. Serve over rice.

Crawfish and Shrimp Etouffee

  • ⅓ cup of olive oil
  • ¼ cup of flour
  • 1 green pepper, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 stalks of celery, chopped
  • 2 tomatoes, chopped
  • 2 tbsp of Louisiana hot sauce
  • 1 tsp of cayenne pepper
  • 2 tbsp of seafood seasoning
  • ½ tsp of black pepper
  • 1 cup of fish stock
  • 1 lb of crawfish tails
  • 1 lb of shrimp, peeled

Heat oil in a heavy skillet over medium. Slowly stir in flour, stirring constantly until it turns brown, creating the base sauce. This will take about 15 minutes. Once it is brown, add onions, garlic, celery, and green pepper, sauteing for 5 minutes. Add tomatoes, fish stock, and seafood seasoning. Season with hot sauce and cayenne pepper, then add seafood. Cook until shrimp are pink.
